Ingredients
· 8 ounces of kale
· 2 pounds sweet potatoes, diced
· 2 cans (14.5 ounces each) kidney beans salt free
· 2 red bell peppers, seeded and finely chopped
· 2 cans (14.5 ounces each) fire roasted tomatoes, diced
· 1 large red onion, finely chopped
· 2 teaspoons of chili powder
· 2 teaspoons smoked paprika
· 3 cups orange juice
How To
1. Set your Instant Pot to Sauté mode and add onion, bell pepper and half of the orange juice
2. Sauté for 8-10 minutes until tender
3. Add rest of the ingredients (except kale) and stir
4. Bring the mix to a boil (over Sauté mode) and let it simmer for 25-30 minutes
5. Add kale and let it wilt
6. Stir
7. Serve with cornbread and enjoy!
